How much stock do you put into a cars traction rating? I am looking at AA and A traction rated tires.

Tires arent tested by an independent group. Tires ratings are done by the manufacturer in their own tests and the tests arent standardize for all companies. So nothing (Nothing) on the tire can be taken for granted and you cant even compare tires from different companies. Even tires from the same company might not be tested the same way.
tldr: No, shits fucked.

None at all. Every tire maker uses the rating slightly differently.

There's no such thing as a sticky all-season tire. All-season means it's shit in all seasons, engineered for tire life and gas mileage rather than being grippy in any situation.

you can go by tire racks user base reviews and do your own digging around based on that

Well we arent talking about reviews are we? We are talking about ratings on the tire. Of course it would be a shithead tripfag that posts stupid shit like this.
