I was going to write about 90s car at first, but then noticed OP said modern America. The only cars that weren't made in the 90s (until fourth stage of course when it was the 2000s) in Initial D were the AE86/85, and Ryosukes FC. Though technically Ryosukes FC was a 1990 model year. Since Initial D was written in 95, all of those cars were pretty new.

If it was cars from any country, took place in the US and still racing in the mountains probably something like this.

Takumi - FRS would be the first car to come to mind, but this wouldn't make sense. Takumi drove an old car that was considered a shitbox, but was popular in motorsports and had a balanced chassis. He would probably drive an NB Miata.
Keisuke - Keisuke drove an expensive, high end Japanese sports car in Initial D. There is no modern FD right now, the closest thing would be a C7 Corvette. Rivals cars much more expensive than itself, and is an expensive sports car.
Ryosuke - Obviously a C6 if Keisuke has a C7
Iketani - FRS. Similar to a Silvia. Anyone who had a Silvia would drive an FRS or BRZ really

Itsuki's whole thing was that he wanted a complimentary car to Takumi's AE86, but would up getting literally the shittiest car possible (an AE85 with a totally different engine, not just a lower trim 86). So if Jason Tak has a 5.0 Foxbody, Itsuki would probably have a shitbox with the 4-banger and fake five-oh badges (skipping the V6); if he's got an IROC-Z F-body, Itsuki has a base model V6 (skipping the Z/28).

Takumi's wasn't even that modified (if you discount the super 13krpm racing engine later).. or at least wasn't really talked about as a huge point even during the Project D days. It was more like a car that was a dark horse, not obviously competitive or equal in performance overall to the cars it went up against, but well suited for the specific kind of racing and courses in the anime. With that said, I have nothing for suggestions - as long as this hypothetically show says it works and makes it win, it's just as valid.

On very tight mountain roads, drifting is going fast. Not the crazy angles you see in professional drifting, but slight angles allow you to maintain speed through corners. Not drifting would be faster, but only if you had crazy amounts of grip so you wouldn't crash in some of those turns.

American cars are very expensive in Japan, and aren't really suited for the touge. Even many of them heavy, straight line speed focused cars weren't in Initial D like the 3000GT, and 300ZX. The Supra wasn't in it until 4th or 5th stage. The only American car that even compares to those cars handling wise is probably the C5 Corvette.
