For DOOM, try The Mouse And The Mask. Probably his most accessible. After that, you can go back to Operation Doomsday and Born Like This for more old school stuff, or go straight into the masterpiece that is Madvillainy if you want to hear him rap over insanely good jazzy beats that will probably never age.

For Nas, just start with Illmatic. Nothing else to be said, really.
