partially i think, most music is produced by two megacorps, which leads to pop music all sounding very similar these days

No. They just have the best people in the world working on music. Like, the best equipment, technicians, studios, more time is put into the tracks. The producers have mastered he art of creating earworms, look at how many no. 1 hits Max Martin alone has.
No, the difference is professional mixing, and even more so.. Mastering, most amateur recordings are not properly mastered for two reasons... 1) It's not the same as mixing and requires very good ears and monitoring 2)It can be expensive to have it done.
