What's a good starting point for Gentle Giant? This is some of the most technical prog I've heard.
Start right there. Then go to Acquiring the Taste and Octopus.

I've never really liked three friends very much.
I'd say check out Free Hand and Octopus, thats definitely some of their best stuff, but dont overlook Power and the Glory
Side B of The Missing Piece is pretty good too but anything after that isnt really worth your time
After checking out some of their discography definitely be sure to listen to Playing the Fool, their official live album where they practically rewrite the songs

Save Acquiring the taste for last, because the album literally requires that. Their debut is definitely a good starting point and Octopus is obviously their masterpiece and one of prog's masterpieces. Free Hand is where and when they started embracing their pop sensibilities and I'm not sure if it should be even classified as a progressive rock album. Avoid anything after it.
Agreed that Octopus is probably the place to start. Everything from the debut to In'terview (and Playing the Fool, the live album) is considered pre-sellout and definitely worth getting.
Also get this. The only band I know of to assimilate and advance GG's sound
