Is Gypsy Jazz a meme or can it genuinely help me with more experimental playing (If I mix it with more conventional stuff)
It's not a meme
Gypsy jazz is a genre that never really goes out of its own boundaries. The same chords(maj6, min6, dom7), the same rhythm (la pompe), it's own type of guitar, it's own picking technique, it's own type of picks, it's own type of strings. Its not a genre that lends itself to being blended with other styles of playing. This is why so many gypsy jazz guitarists, birele lagrene for example, play regular jazz aswell.
Basically it can get boring after a while, but it's well worth learning and you could probably combine it with something else (to the distain of most gypsy jazz guitarists).
Can you define more experimental playing?

stuff like Spencer Seim or Glenn Branca, neither are explicitly playing the chords or la pompe but I recognise some jazzy quirks in their playing

If you want to sound jazzy then learning other forms of jazz might be easier, as gypsy jazz is so insular
