Why is it that some songs sound better at a lower quality than I higher quality ?

No clue what OP is talking about, but an example in my head is old video game midi music had instrument sounds that were nothing like the actual instrument(like a trumpet would sound like a fax machine), and lots of composers designed their music to sound as good as possible the shitty 16 bit sounds. Bring in a remastered version of a clarinet that the composer counted on sounding like a kazoo, and suddenly you have a shitty sound at higher quality.

That sounds like it's just aesthetic cohesion and also possibly just preferring the familiar version.
