Essentially consists of angular and erratic time signatures. Sounds still vary a lot by band. Some more melodic, some more mathematically insane.

Agreed, there's really two kinds of math rock, theres the chill melodic sort like toe, elephant gym, totorro then theres the crazy, angular, noise rock influenced side like hella, don cab, yowie. Its the same as with jazz, potentially crazy and or chill.
Piglet is great also, because it walks the line slightly.

Hella are probably the kings of this style, they also have the well known Zach Hill of Death Grips on drums.

The tldr of it is that math rock as its known today is more than just angular time signatures, its more a broader style branching from emo, noise and post rock.
