Honestly, I can't say whether you'll like this as I wouldn't term myself a classical music fan so much as a Beethoven obsessive. However, this recording of the 7th Symphony is just absolutely incredible, for fifteen years the 6th Symphony was my favourite until I heard this. I have listened to it ten times in the last fortnight, it is utter perfection (the 5th isn't bad either but I've heard better).

Also I recommend this and in particular the 5th Piano Concerto, it never fails to entrance me.
Furtwangler recording of the Ninth Symphony from 1942 with Himmler and Goebbels watching.
Kovacevich's Beethoven sonatas. Makes Barenboim sound like an amateur and the recording quality is second to none.
