>tfw i will never be a master of every instrument
It seems every month I pick up a new instrument, try it out, then get bored of it. How do I stop doing this?
What's the matter with being a multi-instrumentalist?

Nothing. The problem is I lack the patience to actually learn an instrument.
Challenge yourself with something increasingly difficult everyday. Something that you can't easily learn, new techniques.

Be like Sufjan Stevens. Play a shit ton, but focus on songwriting,

Have you ever taken lessons for one?

I used to take lessons for the trombone in high school. I was pretty good at it, but then got bored of it.

Has anyone used Musician here? Is it worth using to learn instruments on?

>not learning an instrument through sheer will, determination, rocksmith, and focus

Well, what have you tried so far?
My feeling is that you lack long term goals, something that might possibly take years.
After playing guitar for 15 years, i decided to take up violin. I can't see myself becoming bored with it anytime soon.
Even after a month i find it more fun and that little thing pumps out sweeter sounds than i could ever get out of a guitar.
