I'm starting to get into Indian music, and I've listened to a few of Ravi Shankar's albums and really like what I hear.
What is the best Indian music album? I'm looking for something with quite a bit of sitar and quite peaceful too.

He's from New Zealand, not India, but it's very peaceful music with quite a lot of Sitar.
His first two Albums in particular are fantastic if you like this kind of music.

There are two main types of Indian classical music: Hindustani and Carnatic. Ravi played Hindustani, so you should look for more sitar players who have been trained in the Hindustani tradition.
