Different interpretations. People put their own spin on the music. Ex: listen to Harnoncourt's Mozart 40 and Klemperer's Mozart 40. Harnoncourt's is quicker and more anguished and Klemperer's is slower and more deliberate.

Because composers did not record their music in audio format, only on paper. Even with those that did, scores invite others to perform it how they please

my guess would be that it's been around (among other genres) for hundreds or thousands of years, the only way to hear a song would be to play it , and so it's grown into a tradition , why would they stop just because they have it recorded?
