Bill Evans has a huge discography? Why not look into more of his music? If you like that album you will probably also like Moonbeams, California Here I Come, and You Must Believe in Spring.
Other artists to check out are Ahmad Jamal, Denny Zeitlin, Don Friendman, Keith Jarrett, and Fred Hersch.

miles davis during his cool and modal periods would probably suit you. birth of the cool and kind of blue might have what you're looking for
mingus is a great jazz artist (my personal fave for whatever that's worth) cuz his shit SWINGS like no one elses. check his recording of moanin' or black saint and the sinner lady. let my children hear music is a bit more classically-inflected, and that might be cool for you if you dig evans' stuff.

davis mingus and coltrane are the holy trinity of jazz, thats my two cents. from those guys you can branch off into basically every direction jazz has to offer

Bill Evans Trio is distinctive but they have a huge body of work. Also check out

I don't really get the thing with Roland Kirk. It seems incredibly gimmicky when he's playing multiple instruments, he loses air and his playing sounds 'weak' as in literally lacking power. When he plays a single instrument he loses all distinctiveness, and I'd rather listen to more distinctive reed players.

but he doesnt lose air or sound weak, his distinctiveness is in his ability to play multiple instruments and create whole reed sections by himself. his use and practice of circular breathing makes him very strong when sustaining long notes on one instrument and playing melody on another, or even playing a melody with both.

obvi duke and louis, and bird and monk a little later on were critically important artists, but i do feel like all of those guys were laying the groundwork for what would go down in the late 50's throughout the 80's
