Sometimes the arrangements are different, or if the production is particularly bad the live recording can have more clarity.

Take Tim Buckley's Dream Letter live album for instance. It includes songs from Goodbye and Hello which feature a very typical 60s orchestral pop sound that is too overblown for my tastes. That live album has Tim playing them in the style of his later, more relaxed/jazzy style and is an overall improvement in sound quality as well.
