Can you recommend some good albums of "traditionnal" japanese music ? I know basically nothing about asian music, but I was listening to Babymetal, and though I do not like Babymetal, I liked the intro to "Headbanger"

Search for "Wagakki Band". Traditional Japanese instruments, modern music.
If you just want some good Japanese rock, try Band Maid. They actually play their instruments.
