hans zimmer regularly brings in live instrumentation from gigantic orchestras. when he needs a horn section, he gets a real-life horn section that he then sequences and edits minimally. skrillex would sample one from a youtube video or design one using a synthesiser, martin garrix would write it out in midi from a preset

check out gustavo santaolalla making his music - he combines multi-instrumentalism with digital recording techniques extremely well
