So i've been getting into classical music lately, but one thing i've always wondered is, how did they record the music for us to listen to today if things like microphones weren't invented back in the days of Beethoven and Bach etc?

as you can see in op's picture. colors were already invented when mozart lived. It's an urban legend that they were invented in the 1950s, they had already been around for 3 or 4 centuries at that point. They just weren't as common as they are now and only rich people like mozart could afford them.
