Aftermath is pretty darn good. I definitely recommend you go to that next if you haven't heard it already.
Their first album is a pretty solid collection of bluesy, garage-type rock & roll. It's not as "cohesive" as some of their later ones, but I'd say it's impressive by 1964 standards.
Aftermath is the first one I think really works as an "album" and it's tied with BtB for my favorite 'Stones album. It's got more of a "folk" sound, and a kind of dark/spooky vibe ("Paint It, Black" is a good "sampler" of it).
So you guys like the Stones when they're not the Stones, basically.

Arthur is a very interesting album. Its got a very similar theme to The Village Green Preservation Society, but with a harder rock sound.

I'd say everything up to Mick Taylor leaving is good but I think Hot Rocks 1964-1971 is really the only essential Stones release.
