Applejack is perhaps the most beta pony other than Fluttershy. She is always looking for gratification through helping and being of service to other ponies, even for free. She goes through such lengths that she physically exhausts herself just to not disappoint other. And when she does disappoint, she runs away cowering from them.

Applejack is in my opinion the very definition of being of a beta.
