Probably taken from various fantasy sources. The fairies in Artemis Fowl called humans mud men/people, but I'm sure it's not the first to use it. It also meets the criterium of twisting the name of the race without adding too many syllables.

As a rule of thumb, a slur in English should never have more than three. One and two are ideal.

If it's twisting a name, then it should have less than or equal to the amount of syllables.

So Earth to mud meets these criteria. They're both a syllable and Earth can mean the ground and its dirt.

It's simply a well crafted slur, and so it caught on.
