That was not Rarity's argument. Her argument was appeal to emotion: how does Applejack feel about being told apples are shit is how designers feel being told fasion is shit. It turned out Applejack does care about not offending the fashion ponies. She could have countered that fashion ponies' feelings don't matter becuse of the reason you give.

Good thing Applejack knew that she didn't know about fashion and could only judge it on the merit of workability, to what Rarity told her to do. The fact that Applejack, THE APPLEJACK, who knows the value of hard work more than anypony would destroy someone's all-night-work (the feather hat) in ignorance just shows how much of a shit the episode was. And to add insult to the injury Rarity invited Applejack to be a judge so that she could... pick neither and be neutral? What was the fucking point, shut up and don't say shit? Remember that episode about always being honest to yourself; yeah, fuck that. Rarity is a bitch and AJ knew perfectly well how it would end up if she were to be a judge, but no, Rarity, at first, remained absolutely silent which AJ took as a sign of her doing everything correctly and only after she was abandoned by everypony because of her decision she decided to be a passive agressive cunt. Maybe in Canterlot, but for Ponyvile there is no real comparison between what Applejack does and those fashion students. Or even Rarity for that matter. The Apples contribute far more to that society.

Again, the problem with the episode is that instead of judging things based on practicality in general she judged them based on that for her very niche case. She was being honest with an irrelevant opinion.

AJ seems to think "practical" is one size fits all and has to mean clothes you do manual labor in.

And Rarity knew perfectly well what AJ seems to think "practical" is, it is entirely her fault. AJ made it abundantly clear that she knew nothing about fashion and Rarity was content with Applejack simply judging the clothes on how practical they would be to do chores and walk around town; for some retarded reason because all three of the fashionistas made clothes you wouldn't be able to do that in. She invited AJ, she asked AJ to think it over after she refused, she didn't tell AJ to cut it when the problem was a minimal at after all of that she acted like a condescending cunt by making AJ talk to the strawberry mare and then saying with a smug attitude "What's wrong Applejack? She's just saying her opinion." Well, nobody asked for her opinion. Rarity should have had learned a lesson as well as Applejack that you can't interest others in your hobbies, but she didn't - it's a shit episode.

Actually a lot of her opinions on the practicality--which was what she was brought in for--of dresses made a lot of sense. Remember this is Ponyvile, not Canterlot, and the customer base that is centered where the dresses would be displayed are mostly farmers who work the land or bakers and blue collared workers. Very few are throwing money around and the town takes AJ word on things seriously.

Yes AJ went to far with the fashion comment and the hat, but that was the point, to show AJ going too far for the audience. Still, a dress that drags or a too many button piece for a non-unicorn customer are not going to sell.
