They really did have a much heavier emphasis on body language and interpersonal interaction then. Just watching rainbow for a a minute or so showed that almost all of her expressiveness came from her hoof movements and body position, as well a applejack and twilight gesturing frequently to show their reactions to various bits of dialog instead of extreme facial distortion like we've been seeing of late.
Even the quick interaction between spike and pinkie that would have happened off screen these days was shown briefly to give an explanation for him being in the balloon, and to give light example of their character.

It really feels like the animation quality has gone down in recent years on favor of fast, almost hyperbolic emoting and slapstick story-telling

The scene composition is also simpler, as are camera angles - the animation wasn't that lush but it was used in a clever way. Voice acting and the expressive delivery of long lines is what also pulls it. I like the sometimes minimalistic approach of S1, here's one of my favorite example. Note the ambience and the usage of BGM.

The only way I can describe it is they were more "gentle" with the way they treated the characters, and the music and the jokes and everything were calmer and not so in your face all the time.

I watched that S7 Episode with Pinkie and the Yaks the other day and I was so disappointed.
I mean amazingly, for an episode about social interaction between creatures, it managed to lack both the social and interaction part because instead it chose to hamfist as many jokes and loud noises into it as possible.

I was watching FWF the other day and was plain sad when I realised the balloon scene with Pinkie and Spike actually had more sincerity and line delivery than the whole episode.

Well I used to think that too, I was confident that they weren't SO BAD now, but I just binge watched the first season and half of season 2 and, there's no mistaking it.
They were so much more fun back then, I'm not even sure why. See stare master, dragonshy and the diamond dog episode. You can't even compare them.
Rarara's fabulousness wasn't the same, she was always a drama queen but her whole pitch wasn't all about fashion and her dresses, like she is now.

Mando jokes aside, what we have now are people imitating the prior state of the show, from the writing staff on down.

I just want to point out that whenever we have one of these threads, it completely depends on what time of day on what type replies are given. I really do blame a lot of the behind-the-screen changes for what we're talking about here. We have considerably different storyboarders, animators, and direction than we did in S1-3.

There's someone recording dialogue that's -telling- the VAs to do this- make Pinkie more screechy and so on. The more industry-conventional the entire staff becomes, the closer the show becomes to industry-conventional as well.

Oh yeah, but there's (supposedly) details added to the script. It's written on the page, next to each line when they need to whisper, scream, seem afraid and so on, and that's the writer's job. But there's also the guy accepting the lines and recording everything, obviously. He's to blame as much as the writers for that, but I personally don't mind the voice changes. AJ's S1 accent/words she used were hard to understand at times, I can't see kids liking that too.
And like I said, for RD, I can easily guess that doing raspy voices for long periods of times just ruins your voice.

This is why I prefer the more modern storyboard-driven show creation method. The writers ARE the storyboarders so there's not this disconnect between what is spoken and what is shown onscreen. It leads to much more natural visual gags, and characters will actually accurately describe things on screen. Not to mention it would get rid of all the awkward "side character appears but doesn't say anything because DHX animators wanted to add them in but they were never in the script so they have no dialog." Since most side characters are voiced by the same voice actors, we could have many more incidental characters briefly interacting with the main characters.
