Yeah, that was an unexpected callback that I was happy to see.
There was also Dash's comment about Griffons not getting along and the whole dragon sequence in Twilight's fantasy was one big callback to GoF and also DQ with the lava cliff jumping.
I'm sure shippers noticed in the premiere that it was the second time Sweetie and Spike danced together though I'm sure that was a coincidence and not intentional.

She ends up doing just that at the end by leaving Spike to read to the kids while she spends quality time with Flurry. She's naturally a control freak that likes to manage every detail of whatever it is she's doing. She even had to pick the book and dismissed Spike's suggestion which the kids end up loving.

Someone put it pretty well in another thread, possibly the sticky. Like >>29928285 says, helping others realize they're taking on too much is one thing, realizing it yourself is harder. Also she could definitely handle both situations alone, which was the problem with Applejack and Pinkie who could not handle one task. Twilight could, but she underestimated what it takes to do both. So that's a little different.
Additionally, she really wanted to spend time with her niece, so that clouded her judgement somewhat. It's shown that once she sees Flurry, she doesn't really pay attention to the others anymore, which to me also makes it look a little like she knows she shouldn't, but she can't help herself so she tells herself it'll be fine. Which also makes it somewhat different from AJ and Pinkie's episodes.

You got an answer though, and I can add to that that he's there to assist her, i.e. manage the checklist and plan what to do next. It works better if they work together.

On the other hand, you can of course say that this is somewhat of a plothole: He surely could at least have fetched the cupcakes, so that part could've been avoided. Doesn't mean the rest wouldn't still happen.
