The castle is so big that apart of it could probably be an inn for visitors. They could have a bar and a maybe a dozen rooms for sleeping.

There could also be a hall dedicated to ponyvilles history, filled with souvenirs to buy, trophies, relics, pictures of ponyvilles triumphs, etc. Tourists would also love that.

And maybe a room dedicated to magic, filled with spells to learn and a variety of books. it would also have weekly public lessons taught by Twilight herself.

And of course a library would be in the castle too. It would have two floors filled with thousands of books, the bottom floor will be mainly for socializing and the top area will be for studying.
And Instead of a quiet library it would be mostly a hangout library. You go there to eat snacks, tell stories, meet other ponies, plan town activities there, etc.

I dont know what the episode was called, but it was the one where applebloom tries to deliver pies and applejack goes after her.

This was one of my favorite episodes. It had great world building. The relationship development between applejack and sweetie belle was really good. The action was fun, and the Chimera was fucking badass. Not to mention the fireproof boots for applejack.

I haven't been completely happy with a lot of the ways they've written characters (like Dash and Pinkie) in some episodes, but at the same time I've also enjoyed a lot of their character development in other episodes.

I think they all still have plenty of depth in their good episodes, you just have to sort of ignore the bad ones.
