Illusions don't necessarily have to go poof, I would assume the caster can make it disappear gradually and steadily if the caster is capable of making a realistic looking living creature.

I think it's more plausible that she can change form. Why would she bother with creating an illusion of NMM transforming back into Luna for Twilight only to see? She could have instantly dispelled the illusion, but instead made it look like a transformation. While probably possible for a princess, just seem useless at that time.
