But the Apples in the show already talk how 'northerners' think southerners talk. The slang and accents are watered down enough to be recognizable to children watching the show.

Even if you have a very accurate idea of how the accent sounds (it's Arkansas/South Missouri if anyone's curious) it's still difficult to write out. Phonetically spelling words isn't easy with a standard alphabet. Applejack can be written as heavily as Tom Sawyer or Huck Finn - they have roughly the same accent. But that's hard to write and hard to read, so most authors do something easier and less accurate.

I'd feel bad if ANYONE who was a fic writer had to write a cajun-french horse. Whether speaking english or french it is almost impossible to tell what they are saying. Think of the old guy from water boy, it is almost literally like that but you can usually make out a few words.
