My headcanon for a long time now has been that Cadence becoming an alicorn was completely unlooked for, and Celestia basically bullshitted when she called her the Princess of Love. In reality, Cadence has no actual responsibility and Celestia has no idea what to do with her.

A complementary headcanon I have is that Luna privately hates Cadence.

I don't think Princess of Love has ever been established in the show. All she does is what Twilight mentioned, protecting the Crystal Empire with Shining Armor. Other than that she hasn't been really the princess of anything related to love. But she does have some magic of that variety.
