I agree that Dash would be a good boxer, but I think Gilda edges her out by a hair due to more power and stamina. Same goes for foxy boxing, but there are no rules so Gilda gets to let loose, and this kitty has got some claws.
Pinkie is a fun choice for best wrestler: she's energetic, theatric, and above all eager to have a good time.
Applejack probably grew up wrestling her brother in the pig pin a few times, so she's got experience and earth pony strength in spades.
