The characters are well written and it has some rather interesting world building because the creator was an autistic woman that came with her "bible of horsedom" to pitch her product. It also has a good overall pace, that means you can still have some episodes in a similar setting to focus on character development while the outcome isn't trivial for the overall story. Both ends of the curve are Simpsons with no story progression and always the same starting point and DBZ with no time to flesh out the characters because there's always another villain to defeat.

People enjoy a simply 3 arc story. No need to go experimental, especially if you want kids to understand it.

The humor has it's ups and downs. Try to look for more subtle things. Pinkie has the most references, if you want to go for clever humor. Of course she has the obnoxious moments, but that's for the kids.
