Because she needs Spike to guide her. Twilight was so successful because she had Spike help her with so much crap. He was the one who contacted Celestia in Lesson Zero while her friends were busy not caring. If Twilight had left Spike with Starlight to assist her, he would have put a stop to her madness from the beginning.

Because Starlight saw them as baking lessons/Apple family history lessons/sewing lessons, not as friendship lessons. She was afraid of failing in those tasks, not at friendship, which is what she was afraid of failing at in the premiere and succeeded in in No Second Prances. She just didn't think it was the same.
