I don't think it's saying that other species don't have varying personalities. Ember, Spike, Garble, Dragonshy red dragon, and the king dragon guy all seem to act differently. We mostly just didn't get a chance to see different griffons or yaks (the yaks all acted the same but they were just one-off joke characters). That doesn't mean they aren't different. This Thorax guy definitely seems different from Queen Chrysalis, which is the only other changeling we know much about.
