Easy. She goes insane with the idea of making everyone else around her immortal as well.

She has time travel spells. She'll set up a groundhog day style stable time loop one day, and work at the problem for eternity.

She'll put all of her friends' states of being in her own mind so they will be with her forever.
Trapped for eternity in a constant state of thought only existing when Twilight wills them to.
They will be neither here nor there but at the same time exist in an immortal body of pure thought.
This in turn will torture what little there is left of Twilight's friends, as they will be so close to what they would consider Heaven to be but remain restrained to the mental shackles of Twilight's will.
This in turn, much to Twilight's delight, and the Mane 6's dismay make all their consciousnesses be effectively immortal much like Twilight's.
Twilight might consider living forever might being a pain worse then death, but at least it would be better with friends right?
