Are there any lore books or history books on the timelines and Gundam suits of the Gundam universe?
I'm really interested on diving into the modeling, but there are literally billions of models, and I'd like to at least know what's what and why each suit is significant, its history, the technology, the conflicts it saw use in, famous pilots who used them, production history, etc.
I'd use the wiki, but sometimes it's not very comprehensive or intuitive, and I don't necessarily have the time or interest to watch the anime, which likewise has billions of different shows and runs as well.
Anybody? Is there any material I should look at that would give me a pretty good primer of the world in general?

You can get the Gundam Mechanics book for each gundam series. But it is in Moonspeak, and as always the information is correct until Sunrise retcons it.
For example, in the original Gundam, Dozle didn't want to sortie Big Zam because its still unfinished. but in new canon, Dozle doesn't want to sortie Big Zam because it was made for earth use, to assault Jaburo, because Dozle still believes assaulting Jaburo would win them the war, and he took Apsalus 3 data to build Big Zam in 1 month, because he liked what Ghineas did. So, even if the games like G-Gen states Big Zam is for space, its intended use is the Jaburo assault.
