Hey. So I'm pretty sure I'm pretty much the cancerous gundam fan because the only series I've ever watched was Gundam Wing.
What are some good series (1 or 2) that I should watch to enjoy the series better?

00's a bit of a middle ground between Wing's over the top operatic style and the more grounded(ish) stuff in Universal Century. Early episodes are a bit slower as they're heavy on worldbuilding, but it picks up a lot. This is probably less of an issue now that you don't have to wait a week between episodes.
I take it by your webm that you've seen 0080. If not, you could certaintly watch that. It's short, pretty, and fairly well done. It's also primarily from the perspective of a civilian on the sideline, which is a bit unusual for the franchise.
G is basically a kung fu movie with robots, which is fun as hell but really far off from the rest of the franchise.
