Why are there no mecha sniping series? All I remember is several sniping episodes from 08th MS team and Thunderbolt.

Probably because is not a popular approach of depict mecha battles for the majority of fans and creators. I mean, they are already shaped like giant humanoids to make things more dynamic and flashy.
Personally I would like more attempts with this kind of stuff. This and more close quarter combat in cramped urban environment.

Because snipers are just one specific role in combat and it's silly to just limit your show to only featuring one role. I'm sure you've seen 00. It has a sniper, and alongside the sniper, it has artillery, melee, and highspeed luring units.

Danball Senki has a sniper robot that had a sniper vs sniper duel in at least one episode. Though they are toy robots not full size.
