Now, if you look closely at the 'armored suit', you'll see a guy sticking outside, That's the problem, it doesn't cover the whole body, the pilot drives it exposed. It's literally a mini-mobile suit with a exposed cockpit where the head should be.

That's because those things are useless against mobile suits.
In real life, long-range artillery is useful because you can attack from very long distances, out of the range of returning fire. But that requires things like radio communication between a spotter and the gunners to correct the aim, and that doesn't work in Gundam because PARTICLES. If your enemy is close enough that you don't need a radio spotter, most towed or self-propelled artillery just can't aim fast enough to hit a mobile suit.

In both WWI and WWII didn't they just use wired lines through trenches? I mean there are a lot of ways for spotters to communicate without radios.

Yep, that's how Shiro communicated with Karen, who had her beam rifle ready to act as sniper fire support from 10 kilometres away.

In other stories, there were instances of spotter aircraft relaying enemy positions like in MS Igloo, or just using artillery without first spreading minovsky ECM like in 0083.
