In a world that highly mirrors our own, except that they've just created military-grade Mecha, what kind of person would the military look to recruit for mecha-driver?
Fighter Pilots? Tank Drivers? Heavy-Construction-Machine workers?
They'll train a totally new class of person for it since none of those other roles are really comparable.

Probably the scientists who created the mechas with the help of simulations.
Mecha would either fly like a chunky plane or slide along the ground on Code Geass rollerblades. Gunship pilots and tank drivers would be a good bet although it would be more "realistic" for mecha to have a driver and gunner.
Seems like "pilot" is usually used for mecha operators because the "one person per mecha" thing in a lot of stories most closely corresponds to fighter aircraft.
That said, maneuvering and aiming is a big deal - fighter pilots don't have to worry so much about it because missiles are radar guided and guns are usually fixed in the direction they are moving toward, so aiming and maneuvering are tied together. Stuff like helmet mounted eye trackers make it even less of an issue.
However, whenever manual aiming comes into play (like unguided rockets and guns on armored vehicles and helicopters), the workload of maneuvering and weapons control is too much for one person, hence the need for a crew for tanks and separate pilot/gunner duties for attack helicopters. Unless the mech is going to have extremely simplified and highly automatic fire control system, it'll likely need to have a separate operator and gunner.

I agree with this. A mech will definitely need a crew of 2 to control it. Unless some real life newtype shit starts happening.
As for who would be chosen to pilot the mech, I suppose it depends on what the mech is like. If it's a heavy ground based mech then it will likely control similar to a tank. While a more mobile mech with flying capabilities will control more like an attack helicopter.

They would probably use an advanced AI and maybe have a human to override certain decisions of the AI. Though I doubt they'd put an actual home in the mech.

It depends on how it's controlled. Is it like a Gundam where it's mostly AI controlled and you just guide it from the cockpit, or is it like Evangelion where you're mentally hooked up to it and move it like your own body?

Two joes, an nco, and maybe an LT for a crew.
