Zeruel-based Evas'd be mostly humanoid, utterly OP and probably eat through their pilots' sanity like wew lad. They would be reliant on human-made long range weapons, as the ribbons'd effectively

Ramiel-based Evas would probably have more of an entry pod than entry plug, with shit like cabling fusing with the angelmatter. More extreme trasformations would be perhaps rendered impossible because of the need to not knock the pilot around too much. They''d probably look like the autonomous drones in Rebuild 3, down to the screeching.
