What benefit does making a tank an even bigger target with more obvious weak points serve? Hell, the pilot sits in the highest, most vulnerable point.
The RTX-65, retcon or otherwise, at least kind of has the right idea by keeping things fairly squat and armored. The downside is that it makes the RX-75 look even more impractical by comparison.
Giant robots are fucking stupid in any sort of real battle. Stop arbitrarily deciding you're going to realize that one aspects of this concept is dumb when in fact the whole ordeal is stupid.

Doesn't the Guncannon use the Core Block System? It can detach it's top section and serve as stationary artillery, as well as utilize it's Core Fighter in the event that the caterpillars are damaged. Also, I guess looking like an MS could count as psychological warfare?

They eventually modified it so everything can be done from the core fighter cockpit. Or it was always possible but they didn't leave Hayato to his own devices until later.
