Because the people who do this are fans of G-Reco who still can't get over that show not being as universally loved as they hoped it would be and they're now trying to make that show better by going after every single show that's aired since then. They kinda gloss over it, but the AV system they use has limiters that limit pilot output for their own safety. Mika has always had his limiter off because he can handle it.
There's also limiters on the INPUT the pilots get from the mech. Usually just enough to register what has been damaged, but Mika also removed those so he is fully in touch with his mech. So that when the mech is damaged, he feels the full brunt of it, kinda like Evangelion. Only going beyond Eva and having actual lasting damage to his nervous system.

Model kit manuals for the Vidar mentions that it uses a special control system unlike the one used by the Graze series. It also doesn't have an AV system connector for the pilot in the cockpit. The obvious answer is that the AV system connector is probably connected to a brain other than the pilot, probably Ein's, which is why it's absent from the cockpit. This would also explain why Gundam Vidar doesn't have a demon's name, i.e. you don't need to make a pact with a demon and sacrifice control of your body for more power, unlike Mika did with the Barbatos.
