Look up the gundam wikia after watching the original so you can watch in chronological order. If you can handle IGLOO visually, watch the zeon part only. Fed scum episodes are worthless.

Go watch whatever picks your fancy in terms of universes. If you wanna watch UC though, which is like half of gundam, you gotta start with 0079. You can watch either the tv show, or the movies. Some people will swear by the tv show since it has a bit more character develpment and the movies miss things, but when I first watched 0079 I saw the movies and loved them. Their animation is a little bit better too and some silly shit is cut out. Odds are that if you enjoy the movies, you'll seek the show afterwards and vice versa.

Other than UC, watch whatever AU catches your eye. 00 is good and a bit simmilar to IBO. Personally I like G gundam a lot. It's really fun.
