I think the best way to explain it is there is only so far robotics can take you since they have strict limits for what they can do and handle, while organics can sometimes push themselves past their own limits without destroying themselves in the process. Also it was never mentioned he is able perfectly replicate the abilities of those he fights or that they needed to original source of power for them to be used. So I think while he can go super fast and create energy constructs. That doesn't mean he has tapped into the speed force or created his own lantern corp ring.

Only because Grundy was able to not only feed off Amazo's energy, but able to increase his own. So if Amazo did stick around, Grundy more than likely would have become unstoppable because he was powered by not only dark magic, but whatever power Amazo used. Writing wise, it was basically to keep Amazo from ending the episode right there and give a reason for why he didn't turn up for the rest of the series. Since I doubt continually beating a surly Aquaman at chess every day would keep him entertained.

Amazo came out of the Silver Age. Ostermann was based on Captain Atom (the original Charlton version, not the modern DC version). Incidentally, both Amazo and Captain Atom were created in 1960.
Superman Thought Robot is a mechanical creation, and part of its strength is that it feels the narrative of the story it is in and becomes as powerful as it needs to be to win.
