watch the op closely. you see that overmen, well at least king gainer is a skeleton, with muscles, with skin and with clothes and yeah they do seem to be organic as Gain later on takes the arm off one and uses it as a weapon on his sniper mech. and you have Dominator which is like some crazy fluid monster.

I always thought the cockpit of the overmen looked like ribcages. I guess being organic would be a good explanation for them knowing magic and shit
