I've seen comparisons made between AC and UC suits before on /m/. If I'm remembering correctly stat wise the Leo is much more like a Nemo than a Zaku. I wonder how far the standard compliment of Leos plus the maintence crew, ships, supplies, etc needed to keep them going would make it through the OYW?

That sounds like a decent comparison. The real question is how and when they come into the OYW and if Gundams are involved. If they replace the Federation, then no side develops Gundams as the Leo beats the Zaku I. If they enter as a 3rd party, they hold the the early advantage. Leo's are already 20+ years old with established supply lines and support structures. Of the rule of Gundams continue, they will still get wrecked by the plot-plated armor of the original Gundam but will take Side 3 with no real issue, assuming they aren't wiped by the colony drop.

To be fair the original Project-V Gundam isn't nearly as ridiculous as the 5 Operation Meteor Gundams.
I mean even when compared to Lunar Titanium their Gundanium armor is ridiculously durable.
The only advantage it really has over any of the AC Gundam's is that it is capable of full performance capability in both space and terrestrial environments without any serious modification while most of the original Operation Meteor Gundam's were focused for combat on Earth and their performance suffered in space, but then those ones get modified/rebuilt toward the end of the series with that issue being one of the ones specifically addressed it no longer applies.

The Leo seems to have poor space mobility, not even compared to the Gundams. It's clearly geared for ground combat but when space combat became necessary, it was given a giant external unsightly propellant tank and very small maneuvering rockets . Space combat utility was a last minute thought, apparently. Sure the Leo has ass thrusters, but it doesn't ever use those in space combat.

On the note of grunts, Wing is often made fun of because of very prevalent plot armor. When a Gundam Pilot gets in a grunt unit, that grunt unit can fight and take hits.
The thing is, it's actually quite the genius move. By manipulating the story to put the Gundam Pilots into the grunts, it opened up opportunities to animate the grunt units proper, show what they really can do, and give them some love.

Sandrock's gimmick relative to the other Operation M Gundams was that it was specifically designed for protracted desert combat. Extra cooling vents (including a bigger chin piece), joints are covered or coated to prevent sand from building up in inconvenient locations, and those giant blades instead of beam sabers to reduce energy drain.
However, that's not as cool as BFGs, more dakka, or teleport-nothingpersonal-scythe tomfoolery, which is why Quatre gets the leadership/strategist role as well.

I don't know how to feel about Wufei's waifu.
She was the one that was all about JUSTICE and wanted to fight Oz, and was the strongest martial artist of her clan but couldn't defeat Wufei despite him being a scholarly-type of individual that has nothing to believe in at this point.
Then when Oz arrives to take over/slaughter their colony she goes out in a Tallgeese unit they had squirreled away, barely being able to handle it while he goes out in an uncompleted Shenlong, and in the ensuing battle she dies with him cradling her dying body and gaining some sort of resolve blah blah blah.

I'd say give the original TV series a watch. Beyond that I'm afraid I'm not as into Gundam as I used to be so my following recommendations may be suspect. That said, I'd say watch Gundam OO, Gundam 0080, and Gundam Z and ZZ. I also recommend G Gundam, which is not a normal "Gundam" show by any means, and Gundam 0083. Granted I'd really only recommend 0083 for the animation, the story falls down a tall flight of stairs in the second half.
