I think if Eva didn't hurt Shinji physically when he was piloting it, wasn't alive, didn't go out of control, didn't fuck up his friends, didn't get him lost in another dimension for a while Shinji would be a lot more receptive to piloting it. All those space alien super gods with insane gimmicks didn't help it either.
While Shinji was afraid of the whole thing, he did jump in to pilot it in the first ep when he realized he needs to protect Rei. The problem is all that bullshit started hitting him after.

Piloting Gundam meanwhile is basically easy mode - you can't even be damaged most of the time and your enemies are straight up inferior most of the series. And then Amuro unlocks his magic powers.
Killing people is probably a biggest hurdle when it comes to Gundam.

Amuro can't shoot at people. That was a point made in episode 2 or 3. When Char and the commandos were fleeing Side 7 in their normal suits, Amuro had trouble pulling the trigger. Cause he can't bring himself to kill a human.

But once they got in their Zakus? It dehumanizes them. Amuro doesn't think "That's a human inside that Zaku." He just thinks "Oh goody! Another Zaku I can destroy!"

The same thing happens when the Zeek soldiers planted C4 on his Gundam. He could see the people on the hoverbikes and he couldn't bring himself to kill them. Amuro can't kill another human being. He can only destroy Zakus.

Mostly i just remember making specific note of the fact that 90% of "Sayla's Agony" (that's "The Salt Episode" for those of you who haven't watched the series) is actually in the movies.

Not really. Gendo frankly doesn't care about Shinji and he's demonstrated that multiple times. He often gives orders that totally disregard Shinji's safety or just pull him out of the operation entirely. The overall impression is that Shinji is not required for Gendo/Seele's goals and has contingencies for when Shinji walks out or dies.
