The only game I've played where you mix and match pilots/MS was DWG3, (the fact that I could do shit like pilot GP-02 with Kai was the only reason I even played that game,) but it made you bust your ass grinding non-newtypes to pilot shit like Nu Gundam.

Most suits have ranged guns, earlier suits tend to have ballistic weapons too. How "showy" the attacks are depends on the suit.
