Yeah, and human hands also can't rotate 360' constantly, but it's useful in a robot and exists in muh Gundam.
A humanoid form factor for giant robots is cool but they don't have to obey every restriction of human anatomy. Imagine how useful it would be to rotate your whole arm at the shoulder, or to bend your elbow backwards as easily as forwards?

She did indeed have two thumbs on each hand.
The mechs in Break blade have the middle and ring finger merged into one bigger "finger", this make sense since it has enough finger to handle a weapon/do complicated finger things.
On the same topic you could ask why do giant guns have to have their grips tilted backwards slightly, our guns are like that because of the base part of our thumbs. Robot don't need those.

I practice Hema, Long Sword specifically, and I use my pinky A LOT to get more leverage and power, so sword fighting always comes to mind for me.

The fingers should just be more spaced out, then you could maybe do with one less. There's no reason to keep them to close together if they are strong enough.
Sword fighting, especially the katana, utilizes the left pinky for driving the blade (the right hand is more of a guide). This is why the yakuza would cut left pinkies off of their dishonored, to make them unable to wield a sword properly again. Source: years of kendo
