Sounds like you want SEED. Excells in what you describe.

If you liked 0079, you should go back and watch Zeta. Ignore the noise of both the fans and detractors on here, its pretty much required viewing for UC.

For visuals you can't go wrong with 0083. The characters can be a little frustrating but it's beautiful to watch.

08th MS Team has some great moments, but the romance sub plot is a little thin, though not much more than your average Disney film.

Unicorn is gorgeous and it has a fantastic soundtrack.

That's about all I've seen of UC. If you feel like trying some of the AUs, and want a major change of pace, watch G. 00, GReco, and IBO all have their merits. Even AGE has some redeeming qualities, if you're willing to sit through it.

The main thread of the franchise is Universal Century. It runs from the first Gundam anime, commonly referred to as 0079, and spans through Zeta, ZZ, Char's Counterattack, 0080, 0083, 08th MS Team, Unicorn, F91 and Victory. There are a few more but you get the idea.

Then we have the AUs. They are almost all universally stand alone, though some had OVA sequels.

G - Gundam's themes as told through kung fu allegory. It's a lot of fun, but I is jarring to step into from the relatively more grounded and militaristic UC. You see this show quoted on here a lot and for good reason.

W - This was the gateway show for a lot of US fans. It doesn't hold up as well as G does, and there are some glaring issues with the plot. Endless Waltz is pretty to look at.

X - has a lot of fans on here. Set in a period after a huge war, it has some nifty MS designs and some enjoyable protagonists.

Turn A - the supposed distant future of UC, as well as somehow combining all the AUs into a single timeline (don't think about it too hard). Syd Mead designed the titular Gundam.

SEED - a reimagining of UC. Hugely popular when it debuted. Some clever MS designs, but the protag gets a lot of shit for being basically perfect, especially in the sequel, SEED Destiny, where he takes over the show from the new protag.

00 - this one feels like Wing done right. If you are an Ebikawa fan you'll enjoy the show. S1 is better than S2, and the movie isn't as bad as the haters make it out to be.

Age - an attempt to retell the UC saga over three generations. Clever ideas that don't really pan out. Series drags by Gen 3. Gen 2 was ok, Gen 1 was fine if a bit dull. Some neat if simplistic MS designs, again if you like Ebikawa.

Iron-Blooded Orphans - currently airing. I'm personally enjoying it. As the title suggests the MCs are war orphans. The show can be a little heavy handed with the setting, but it's different enough to hold interest. Barbatos is my favorite Gundam design since Exia.

The Main Timeline for Gundam is the Universal Century or UC. There are four full series, (Mobile Suit Gundam (aka 0079), Zeta Gundam, ZZ Gundam, and Victory Gundam), several OVA Sidestories, (0080: War in the Pocket, 0083: Stardust Memories, 08th MS Team, IGLOO, Gundam Unicorn, and the current Gundam: The Origin), and eight movies, (3 Compilation movies of 0079, 3 Compilation Movies of Zeta Gundam, Char's Counterattack, Gundam F91). They are all pretty much interconnected to make one large metastory.

All the other series are Alternate Universes or AUs. Most AUs only have one series, Cosmic Era (SEED and SEED/Destiny) and the Build Fighters Universe both have two series. All the AUs are self contained with the exception of Turn A and G-Reco which are part of a "Unified" Gundam timeline, though outside of cameos and mecha designs have no real connection to other timelines.

As far as 2000s Gundam go, 00 is leading the pack but Build Fighters and Iron-Blooded Orphans (so far) have been quite good in their own different ways.

But that's just my opinion.
