Most people who write shitty medieval fantasy live a poor-to-moderately comfortable life, anon.
Actually, that's not true. Most people who write it don't make any money off it at all and work day jobs, writing shitty medieval fantasy in their spare time or as fanfic. Of the few that do make it, most don't make much. Some make enough. Fewer make a lot. To make what GRRM does, you have to be one in a million.

In fact, why do anything when most things in life end in sadness. This is the vibe you give off. It's not always about how much you get out of something. Sometimes people do things because they genuinely enjoy it, and cannot even imagine doing something else.
