Joyce, Yeats and Swift were born in Ireland.
Those are also coincidentally the biggest Irish writers.
Yeats' Ideas of Good and Evil is one of the greatest pieces of English literature ever written.

Here's a quick run-down:
Colin Barrett - probably the most well known in recent years for Young Skins (short stories), great style, "gritty" small-town stories in the fictional Glanbeigh
Sara Baume - won a major short story prize and then published Spill Simmer Falter Wither about a lonely old man and his adopted mutt, pretty good stuff
Oisin Fagan - young short story writer, recently finished his book Hostages, which was pretty surreal but overall pretty meh
Tom Morris - published We Don't Know What We're Doing in recent years with a big British publisher, small-town everyday life kind of stuff, pretty average overall
Donal Ryan - published his debut (?) The Spinning Heart, actually surprisingly good, recommend
